Kumasi Poly wins National Chicken Recipe cooking competition

The Department of Hotel, Catering and Institutional Management (HCIM) in Kumasi Polytechnic hosted and won the ultimate prize in the National Ghanaian-American Chicken Recipe Cooking Competition held at the Department.

The Competition was sponsored by the U.S.A. Poultry and Eggs Export Council (USAPEEC) in collaboration with the Ghana National Association of Poultry Farmers (GNAPF) through Zesty Knowledge Advertising Company Ltd as the organizers of the programme.

The rationale for the competition was to contribute to the development of young Ghanaian catering talents in sharing creative ideas using US poultry and local chicken in preparing different recipes. This, it is believed, will enhance the capacity towards service delivery in the Catering and Hospitality Sector of the national economy.

Eight competitors were selected from among many others who tendered in their proposed recipes for the competition. In order to make the selection fair, all the proposed recipes received were reviewed in a double-blind manner (i.e. the reviewers did not know whose recipe they were reviewing neither the participants knew who was analysing their recipe).

Among the selected eight competitors were two from the HCIM Department of Kumasi Polytechnic; and one each from the following Polytechnics – Bolgatanga, Tamale, Koforidua, Ho, Accra and Takoradi.

Each participant was to prepare a three-meal course menu with the main ingredient being chicken and other side attractions.

Participants arrived two days before the competition and were taken through what were expected of them. They were taken to various markets in Kumasi to make purchases for their recipes a day prior to the competition, after which they balloted for their work stations at the Cooking Area.

In a Master Chef style, under the full glare of Television cameras, the competitors with the help of their Runners (assistants during the competition) used their cooking skills to prepare innovative recipes using chicken as a base in a three-hour period allotted for the cooking. Seasoned judges in the Catering Industry were at post to award marks to competitors. Competitors displayed their prepared distinctive recipes in the open, under canopies, for all to see and appreciate their novelties in cooking.

The exhibited recipes and other side attractions included roasted chicken designed as a butterfly (which the competitor called butterfly chicken), chicken designed as a bouquet, roasted chicken designed with fruits and vegetables in many different styles.

The prizes for the competition were as follows;

1st Prize – Five-Burner Gas Cooker with Grill and Oven

2nd Prize – Chest Freezer

3rd Prize – Four-Burner Gas Cooker with Oven

4th Prize – Large Size Microwave Oven

5th Prize – Halogen Home Oven

6th Prize – Non-Stick Cookware

7th Prize – Large Blender

8th Prize – Griller

Starting from the bottom, the 8th prize went to the representative of Tamale Polytechnic; the 7th to Bolgatanga Polytechnic; 6th to Koforidua Polytechnic; 5th to one of the representatives of Kumasi Polytechnic (Abdul Waris) and the 4th went to Ho Polytechnic representative. The second runner-up was the representative of Accra Polytechnic (Gifty Akosah); the first runner-up prize of Chest Freezer went to David Eshun of Takoradi Polytechnic.

The winner of the ultimate prize was Sophia Howard from the HCIM Department of Kumasi Polytechnic. The prizes were awarded to the recipients by the Rector of Kumasi Polytechnic, Prof. N.N.N. Nsowah-Nuamah chaired the occasion.

All the participants were also given Certificates of Participation, whilst their runners (assistants) received Certificates of Support.

In addition to winning the ultimate prize and being crowned Winner of Chicken Recipe 2015, Miss Howard of Kumasi Polytechnic, won two other categories of awards namely, the Most Innovative Recipe and the Best Presentation.

The host Department (HCIM of Kumasi Polytechnic) was awarded a Four-Burner Gas Cooker with Oven in recognition of their hospitality and assistance in organising the programme.

Ms. Zelda Sharp of the U.S.A. Poultry and Eggs Export Council presented the Award which was received on behalf of the Department by Dr. S.N. Osei-Djarbeng, the Head of Department.

The accomplishment of the Department and its representatives in the event threw the Department and the Host Institution into a state of ecstasy as students and lecturers danced to music blared at function.

Students from the Department congratulated each other as they jubiliated and thanked their lecturers especially Mrs. Priscilla Osae-Akonnor, Mrs. Mary Edusei-Offeh and Mrs. Ruth Boateng for the achievement.
